  • 2 sprigs fresh thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and slice mushrooms thickly.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear until golden brown (about 5 minutes per side).
  3. Add sliced mushrooms and minced garlic to the skillet. Sauté for 3-4 minutes until fragrant.
  4. Pour in chicken broth, scraping up any brown bits from the pan. Let it simmer for 5 minutes, then stir in heavy cream and fresh thyme.
  5. Return seared chicken to the skillet and simmer on low for 10-15 minutes until the sauce thickens.
