Description
Mushroom Chicken is a creamy, savory dish featuring tender chicken and earthy mushrooms, perfect for any weeknight dinner or special occasion.
Ingredients
Scale
- 4 boneless skinless chicken breasts
- 8 oz fresh mushrooms (cremini or button, sliced)
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 sprigs fresh thyme
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Gather all ingredients and slice mushrooms thickly.
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear until golden brown (about 5 minutes per side).
- Add sliced mushrooms and minced garlic to the skillet. Sauté for 3-4 minutes until fragrant.
- Pour in chicken broth, scraping up any brown bits from the pan. Let it simmer for 5 minutes, then stir in heavy cream and fresh thyme.
- Return seared chicken to the skillet and simmer on low for 10-15 minutes until the sauce thickens.
Notes
- Feel free to experiment with different types of mushrooms or add herbs like rosemary for extra flavor.
- For a lighter version, substitute heavy cream with half-and-half.
