- 1 cup bell peppers (mixed colors), sliced
- 1 cup carrots, thinly sliced
- 1 cup zucchini, sliced
- 2 green onions, chopped
- 3 tbsp low-sodium soy sauce

- 1 tbsp cornstarch mixed with 2 tbsp water
- 1 tsp sugar
Instructions
- Rinse the vegetables and chop them into desired sizes.
- Cook the lo mein noodles in boiling salted water for about 4-5 minutes until tender. Drain and set aside.
- In a large skillet or wok, heat the sesame oil over medium-high heat. Sauté bell peppers, carrots, and zucchini until softened, about 3-4 minutes.
- Stir in the soy sauce, sugar, and cornstarch mixture until well combined and fragrant.
- Add the cooked noodles to the skillet and toss gently to coat them in the sauce. Garnish with green onions before serving.
