Description

Vegetable Lo Mein is a quick, vibrant dish that combines tender noodles with a colorful array of fresh vegetables for a satisfying meal ready in under 30 minutes.


Ingredients

  • 8 oz lo mein noodles
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup carrots, thinly sliced
  • 1 cup zucchini, sliced
  • 2 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tsp sugar

Instructions

  1. Rinse the vegetables and chop them into desired sizes.
  2. Cook the lo mein noodles in boiling salted water for about 4-5 minutes until tender. Drain and set aside.
  3. In a large skillet or wok, heat the sesame oil over medium-high heat. Sauté bell peppers, carrots, and zucchini until softened, about 3-4 minutes.
  4. Stir in the soy sauce, sugar, and cornstarch mixture until well combined and fragrant.
  5. Add the cooked noodles to the skillet and toss gently to coat them in the sauce. Garnish with green onions before serving.
