Instructions
- In a large mixing bowl, combine the drained salmon, breadcrumbs, eggs, onion, dill or parsley, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
- Shape the mixture into small patties (about 2 inches wide) and press gently to ensure they hold together.
- Heat oil in a skillet over medium heat until shimmering.
- Fry the patties in batches for about 3-4 minutes on each side until golden brown and crispy.
- Transfer cooked patties to paper towels to drain excess oil and serve warm.

- For added flavor, consider using crushed crackers instead of breadcrumbs or mixing in a dash of lemon zest.
