Description

Ingredients

  • 1 (14.75 oz) can skinless, boneless salmon, drained
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1/4 cup finely chopped onion
  • 2 tbsp fresh dill or parsley, chopped
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Oil for frying (about 3 tbsp)

Instructions

  1. In a large mixing bowl, combine the drained salmon, breadcrumbs, eggs, onion, dill or parsley, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small patties (about 2 inches wide) and press gently to ensure they hold together.
  3. Heat oil in a skillet over medium heat until shimmering.
  4. Fry the patties in batches for about 3-4 minutes on each side until golden brown and crispy.
  5. Transfer cooked patties to paper towels to drain excess oil and serve warm.

Notes

  •  For added flavor, consider using crushed crackers instead of breadcrumbs or mixing in a dash of lemon zest.
