Ingredients

  • 3 cups all-purpose flour
  • 1 ¼ cups warm water (110°F/43°C)
  • 2 tsp active dry yeast
  • ¼ cup extra virgin olive oil (plus more for drizzling)
  • 1 tsp salt
  • 2 tbsp fresh rosemary or thyme (optional)

Instructions

  1. In a bowl, mix warm water and yeast; let sit until foamy (about 5 minutes).
  2. In a large mixing bowl, whisk together flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Stir until combined, then knead on a floured surface for about 8 minutes until smooth.
  4. Place dough in an oiled bowl, cover with plastic wrap, and let rise in a warm place until doubled in size (approximately 1-1.5 hours).
  5. Gently punch down the dough, transfer it to an oiled baking sheet, and use your fingers to create dimples.
  6. Drizzle with olive oil, sprinkle herbs and salt on top, then let rest for 20 minutes as you preheat the oven to 425°F (220°C).
  7. Bake for 20-25 minutes until golden brown. Let cool slightly before slicing.
