Instructions
- Rinse the fresh raspberries under cold water and gently pat dry.
- In a microwave-safe bowl, melt the chopped white chocolate in 30-second intervals, stirring until smooth.
- In a separate bowl, whip the heavy cream with an electric mixer until soft peaks form.
- In a small bowl, dissolve gelatin in warm water, then stir into the whipped cream along with sugar and vanilla extract.
- Gently fold the melted white chocolate into the whipped cream mixture until combined. Carefully fold in half of the raspberries.
