  • 1 cup fresh raspberries, divided
  • 1 cup heavy cream
  • 1/3 cup granulated sugar
  • 1 tsp unflavored gelatin powder
  • 2 tbsp warm water
  • 1 tsp pure vanilla extract

Instructions

  1. Rinse the fresh raspberries under cold water and gently pat dry.
  2. In a microwave-safe bowl, melt the chopped white chocolate in 30-second intervals, stirring until smooth.
  3. In a separate bowl, whip the heavy cream with an electric mixer until soft peaks form.
  4. In a small bowl, dissolve gelatin in warm water, then stir into the whipped cream along with sugar and vanilla extract.
  5. Gently fold the melted white chocolate into the whipped cream mixture until combined. Carefully fold in half of the raspberries.
  6. Spoon the mixture into serving dishes and top with remaining raspberries. Chill in the refrigerator for at least two hours before serving.
