- 3–4 boneless, skinless chicken breasts (cooked and shredded)
- 8 oz cream cheese (softened)
- 2 sheets puff pastry (thawed)
- 3 green onions (chopped)
- 1 tsp garlic powder
- Salt & pepper to taste
- 1 egg + 1 tbsp water (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine cooked shredded chicken, cream cheese, chopped green onions, garlic powder, salt, and pepper until well mixed.
- Roll out the thawed puff pastry sheets on a lightly floured surface.
- Cut each pastry sheet into squares approximately 4 inches wide.
- Place about two tablespoons of filling in the center of each square. Fold the corners over to create pockets and pinch edges tightly to seal.
- Whisk together the egg and water for the egg wash; brush it over each sealed pillow.
- Arrange the pillows on a parchment-lined baking sheet and bake for 25-30 minutes or until golden brown.
