  • 3 tablespoons low-sodium soy sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon rice vinegar
  • ¼ cup chopped nuts (peanuts or cashews, optional)

Instructions

  1. Wash and chop the bell peppers and slice the green onions.
  2. Heat sesame oil in a skillet over medium heat. Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
  3. Add ground chicken to the skillet and cook until golden brown, breaking it apart with a spatula (about 5-7 minutes).
  4. Stir in chopped bell peppers and green onions; cook for an additional 3-5 minutes until slightly softened but still crunchy.
