Ingredients

  • 1 cup Arborio rice
  • 2 cups fresh green peas (or frozen)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping the onion and garlic finely.
  2. Heat olive oil in a large skillet over medium heat. Add onions and sauté until translucent (4-5 minutes).
  3. Stir in garlic and Arborio rice for 1-2 minutes until coated in oil.
  4. Gradually add vegetable broth one ladle at a time, stirring continuously until absorbed before adding more.
  5. Once the rice is al dente (15-20 minutes), fold in fresh green peas and lemon zest.
  6. Cook for an additional couple of minutes, then mix in grated Parmesan cheese. Season with salt and pepper to taste.
