Ingredients

  • 1 medium spaghetti squash
  • 1 lb lean ground turkey
  • 3 cloves fresh garlic, minced
  • 2 tsp Italian seasoning
  • 28 oz canned crushed tomatoes
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle olive oil inside each half and season with salt and pepper.
  2. 2. Place the squash cut-side down on a baking sheet lined with parchment paper. Bake for 30–40 minutes until tender and easily shredded into strands.
  3. 3. In a large bowl, combine ground turkey, minced garlic, Italian seasoning, salt, and pepper. Mix gently to form meatballs.
  4. 4. Heat olive oil in a skillet over medium heat. Cook meatballs until golden brown all over, about 10–12 minutes.
  5. 5. Pour in crushed tomatoes and stir to coat the meatballs. Let simmer for 10–15 minutes.
  6. 6. Once the squash is cool enough to handle, use a fork to scrape out strands into serving dishes. Top with turkey meatballs and sauce, then sprinkle with Parmesan cheese.

  • For added flavor, mix in chopped spinach or bell peppers into the turkey mixture.
