- 2 tbsp extra virgin olive oil

Instructions
- Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise, scoop out seeds, drizzle with olive oil, and sprinkle with salt.
- Place squash cut-side down on a lined baking sheet and roast for 40-45 minutes until tender.
- In a mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Form into small meatballs.
- Heat olive oil in a skillet over medium heat. Cook meatballs until golden brown (about 8-10 minutes) and they reach an internal temperature of 165°F (74°C).
- Pour marinara sauce over meatballs and simmer for about 10 minutes until heated through.
- Shred the roasted squash into bowls or plates using a fork and top with turkey meatballs and sauce.
