Ingredients

  • Large shrimp (peeled and deveined)
  • Bell peppers (red, yellow, green)
  • Broccoli florets
  • Carrots (thinly sliced)
  • Garlic (minced)
  • Low-sodium soy sauce
  • Sesame oil
  • Cornstarch
  • Green onions (for garnish)
  • Rice or noodles (to serve)

Instructions

  1. Prep all ingredients by chopping vegetables and mincing garlic.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sauté shrimp until pink and opaque (3-4 minutes), then add minced garlic.
  4. Add bell peppers, broccoli, and carrots; stir-fry for another 3-4 minutes until veggies are tender-crisp.
