Description

Pineapple Coconut Balls are a tropical delight, combining sweet pineapple and creamy coconut into bite-sized treats that bring sunshine to any occasion. Perfect for snacks or gatherings!

Ingredients

Scale
  • 1 cup dried unsweetened pineapple, finely chopped
  • 1 cup sweetened condensed milk
  • 2 cups unsweetened shredded coconut
  • ½ cup chopped almonds (or nut of choice)
  • ¼ cup powdered sugar (for dusting)

Instructions

  1. In a large mixing bowl, combine the finely chopped dried pineapple, sweetened condensed milk, shredded coconut, and chopped almonds. Mix until well combined.
  2. Using your hands, roll small portions of the mixture into bite-sized balls. If sticky, dampen your hands slightly for easier rolling.
  3. Roll each ball in powdered sugar until fully coated to add sweetness and prevent sticking.
  4. Place the coated balls in the fridge for at least 30 minutes to firm up before serving.
