Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves, chopped
  • 3 garlic cloves, minced
  • 2 tsp Italian seasoning blend
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grease a baking dish with olive oil.
  3. In a bowl, mix olive oil, minced garlic, salt, pepper, and lemon juice. Coat the chicken in this mixture and marinate for 15 minutes.
  4. Sprinkle chopped basil and Italian seasoning over the marinated chicken.
  5. Scatter halved cherry tomatoes around the chicken in the baking dish.
  6. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
