Ingredients

- 3–4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 cup low-sodium chicken broth
- 4 garlic cloves, minced
- 1 onion, chopped
- Salt and pepper to taste
- 1 teaspoon dried thyme or rosemary
- Juice of 1 lemon
Instructions
- Gather all ingredients. Chop onion and mince garlic.
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil; sauté onions and garlic for 3-4 minutes until fragrant.
- Add chicken breasts to the pot, season with salt, pepper, and thyme (or rosemary). Stir to coat evenly.
- Pour in chicken broth and lemon juice; stir gently to combine.
- Seal the lid tightly and set to cook on ‘Manual’ high pressure for 10 minutes. Allow natural pressure release for 5 minutes before quick-releasing any remaining steam.
- Remove chicken and shred or slice before serving with sauce.

- For added flavor, marinate the chicken beforehand or swap in your favorite vegetables.
- To enhance tenderness, try using bone-in pieces.
