Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup low-sodium chicken broth
  • 4 garlic cloves, minced
  • 1 onion, chopped
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or rosemary
  • Juice of 1 lemon

Instructions

  1. Gather all ingredients. Chop onion and mince garlic.
  2. Set the Instant Pot to ‘Sauté’ mode. Add olive oil; sauté onions and garlic for 3-4 minutes until fragrant.
  3. Add chicken breasts to the pot, season with salt, pepper, and thyme (or rosemary). Stir to coat evenly.
  4. Pour in chicken broth and lemon juice; stir gently to combine.
  5. Seal the lid tightly and set to cook on ‘Manual’ high pressure for 10 minutes. Allow natural pressure release for 5 minutes before quick-releasing any remaining steam.
  6. Remove chicken and shred or slice before serving with sauce.

  • For added flavor, marinate the chicken beforehand or swap in your favorite vegetables.
