Ingredients

  • Boneless, skinless chicken thighs
  • Long-grain white rice
  • Low-sodium chicken broth
  • Onion
  • Garlic cloves
  • Carrots
  • Frozen peas
  • Spices (salt, pepper, paprika)

Instructions

  1. Set your Instant Pot to ‘Sauté’ mode. Add olive oil and sauté chopped onions until golden brown (about 3 minutes).
  2. Stir in minced garlic, then add bite-sized chicken pieces and brown slightly for extra flavor.
  3. Add rinsed rice, chicken broth, diced carrots, salt, pepper, and paprika. Stir gently to combine.
  4. Close the lid and set the valve to sealing mode. Cook on ‘Manual’ or ‘Pressure Cook’ for 10 minutes.
  5. Allow natural pressure release for 10 minutes before switching to venting mode. Stir in frozen peas before serving.
