  • 2 cups fresh spinach, roughly chopped

  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil salted water in a large pot. Add linguine and cook for 3-4 minutes until al dente. Drain, reserving some pasta water.
  2. Sauté Garlic & Spinach: In a skillet over medium heat, add olive oil and garlic. Sauté until fragrant, then add spinach until wilted.
  3. Add Cream & Cheese: Pour in heavy cream and stir constantly. Add Parmesan cheese until melted and creamy.
  4. Mix in Sun-Dried Tomatoes: Stir in chopped sun-dried tomatoes to the sauce.
  5. Combine Pasta & Sauce: Add cooked linguine to the skillet, tossing everything together with reserved pasta water as needed for consistency.
  6. Season & Serve: Adjust seasoning with salt and pepper. Serve immediately on warm plates, garnished with more Parmesan if desired.
