- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup plain yogurt
- 2 tbsp curry powder
- 1 tbsp fresh ginger, grated
- 4 garlic cloves, minced
- 2 cups diced tomatoes (canned or fresh)
- ½ cup heavy cream or coconut milk
- 1 large onion, thinly sliced
- 2 green chilies, chopped (adjust to taste)
- Fresh cilantro for garnish
Instructions
- Marinate chicken: In a bowl, mix yogurt, curry powder, ginger, and garlic. Add chicken pieces and coat well. Refrigerate for at least one hour.
- Sauté onions: Heat oil in a large skillet over medium heat. Cook sliced onions until golden brown (5-7 minutes).
- Cook chicken: Add marinated chicken to the skillet. Cook until no longer pink (8-10 minutes), stirring occasionally.
- Prepare sauce: Stir in diced tomatoes and green chilies; simmer for about 10 minutes until thickened.
- Finish with cream: Pour in cream or coconut milk and mix well; simmer gently for another 5 minutes.
- Garnish and serve: Remove from heat and garnish with cilantro. Serve hot with basmati rice or naan.
