  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup plain yogurt
  • 2 tbsp curry powder
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 2 cups diced tomatoes (canned or fresh)
  • ½ cup heavy cream or coconut milk
  • 1 large onion, thinly sliced
  • 2 green chilies, chopped (adjust to taste)
  • Fresh cilantro for garnish

Instructions

  1. Marinate chicken: In a bowl, mix yogurt, curry powder, ginger, and garlic. Add chicken pieces and coat well. Refrigerate for at least one hour.
  2. Sauté onions: Heat oil in a large skillet over medium heat. Cook sliced onions until golden brown (5-7 minutes).
  3. Cook chicken: Add marinated chicken to the skillet. Cook until no longer pink (8-10 minutes), stirring occasionally.
  4. Prepare sauce: Stir in diced tomatoes and green chilies; simmer for about 10 minutes until thickened.
  5. Finish with cream: Pour in cream or coconut milk and mix well; simmer gently for another 5 minutes.
  6. Garnish and serve: Remove from heat and garnish with cilantro. Serve hot with basmati rice or naan.
