- 1.5 cups long-grain basmati rice
- 500g boneless chicken thighs
- 2 large onions, thinly sliced
- 4 cloves fresh garlic, minced
- 1-inch piece ginger, minced
- 2 medium ripe tomatoes, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 4 green cardamom pods
- 1 pinch saffron threads soaked in 2 tbsp warm water
- ¼ cup cilantro leaves, chopped
- ¼ cup mint leaves, chopped
- ½ cup plain yogurt
- 3 tbsp cooking oil or ghee
- Salt to taste
Instructions
- Rinse basmati rice in cold water until it runs clear; soak for 30 minutes.
- In a large bowl, combine yogurt, garlic, ginger, and spices. Add chicken and marinate for at least 30 minutes.
- Heat oil or ghee in a large pot over medium heat. Sauté onions until golden brown (about 10 minutes).
- Stir in tomatoes and salt; cook until soft (about 5 minutes).
- Add marinated chicken to the pot; cook until fully cooked (15–20 minutes).
- Gently fold in soaked rice with sufficient water for cooking; bring to a boil then reduce heat to low. Cover and simmer for 20 minutes.
- Drizzle saffron-infused water over rice; fluff gently with a fork before serving.
