  • 8 corn tortillas
  • 1 cup enchilada sauce (store-bought or homemade)
  • 1 ½ cups shredded cheddar cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • Fresh cilantro for garnish
  • Sour cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of oil over medium heat. Sauté onions until translucent (about 5 minutes).
  3. Add ground beef and cook until browned, breaking it apart. Season with salt, pepper, and minced garlic during the last minute.
  4. Stir half of the enchilada sauce into the cooked meat mixture.
  5. Fill each corn tortilla with a scoop of the beef mixture, roll tightly, and place seam-side down in a baking dish.
  6. Drizzle remaining enchilada sauce on top and sprinkle with shredded cheese.
