Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat a drizzle of oil over medium heat. Sauté onions until translucent (about 5 minutes).
- Add ground beef and cook until browned, breaking it apart. Season with salt, pepper, and minced garlic during the last minute.
- Stir half of the enchilada sauce into the cooked meat mixture.
- Fill each corn tortilla with a scoop of the beef mixture, roll tightly, and place seam-side down in a baking dish.
- Drizzle remaining enchilada sauce on top and sprinkle with shredded cheese.
- Bake for 20-25 minutes until bubbly and golden brown.
