- 8 corn or flour tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, chopped
- 2 tsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Sour cream (optional for serving)
Instructions
- Prepare your ingredients by chopping the onions and measuring out the spices.
- In a large skillet, heat olive oil over medium heat. Add chopped onions and cook until translucent (about 5 minutes).
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned (7-10 minutes). Drain excess fat if necessary.
- Stir in cumin and chili powder, allowing to cook for an additional 2 minutes.
- Preheat your oven to 350°F (175°C). Spoon meat mixture into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
- Pour enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Bake in the oven for 20-25 minutes until cheese is melted and bubbly.
