  • 8 corn or flour tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, chopped
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (optional for serving)

Instructions

  1. Prepare your ingredients by chopping the onions and measuring out the spices.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and cook until translucent (about 5 minutes).
  3. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned (7-10 minutes). Drain excess fat if necessary.
  4. Stir in cumin and chili powder, allowing to cook for an additional 2 minutes.
  5. Preheat your oven to 350°F (175°C). Spoon meat mixture into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  6. Pour enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  7. Bake in the oven for 20-25 minutes until cheese is melted and bubbly.
