- 1 cup cooked brown rice (or quinoa)
- 1 cup diced bell peppers (red or yellow)
- 1 medium onion, diced
- ½ cup chopped fresh cilantro

- 2 tbsp taco seasoning
- 1 cup salsa (mild or spicy)
- 1 cup shredded cheddar cheese
- ½ cup sour cream or Greek yogurt

Instructions
- Cook brown rice according to package instructions using vegetable broth instead of water for added flavor.
- In a skillet over medium heat, sauté diced onions and bell peppers in olive oil until softened.
- Add the ground beef to the skillet and cook until browned (about 6-8 minutes). Drain excess fat if necessary.
- Stir in taco seasoning and rinsed black beans; simmer for about five minutes while stirring occasionally.

- In serving bowls, layer cooked rice as the base, followed by the beef mixture, salsa, cheese, sour cream or yogurt, cilantro, and avocado slices.

- For vegetarian burrito bowls, replace the beef with black beans or grilled vegetables.
- Feel free to customize toppings based on preference.
