Ingredients

  • 1 cup water
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 8 ounces sashimi-grade tuna, diced
  • 2 tablespoons sriracha sauce (adjust to taste)
  • 2 tablespoons mayonnaise (preferably Japanese Kewpie)
  • 2 green onions, finely chopped (for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Rinse the sushi rice until the water runs clear. Combine in a pot with water and bring to a boil over medium heat.
  2. Lower the heat to simmer, cover tightly, and cook for about 15 minutes until tender.
  3. In a bowl, mix rice vinegar, sugar, and salt until dissolved; stir into the cooked rice.
  4. While cooling the rice slightly, combine diced tuna with sriracha and mayonnaise in another bowl.
  5. Spread sushi rice in a greased baking dish and press down evenly to form a compact layer.
  6. Heat oil in a non-stick skillet over medium-high heat. Cut pressed rice into squares or rectangles and fry each side until golden brown (about 3-4 minutes).
  7. Serve crispy rice topped with spicy tuna mixture; garnish with green onions and sesame seeds.
