- 3 tablespoons rice vinegar
- 1 medium cucumber, sliced into thin strips
- 1 ripe avocado, sliced into thin strips
- 2 tablespoons toasted sesame seeds
- 4 sheets nori (seaweed)
- Low-sodium soy sauce (for dipping)
Instructions
- Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions until fluffy.
- Once cooked, transfer the rice to a bowl and mix gently with rice vinegar. Let it cool slightly while keeping it fluffy.
- Prepare fillings by slicing cucumber and avocado into thin strips.
- On a sheet of nori, spread an even layer of sushi rice, leaving about an inch at one end free. Place cucumber and avocado strips down the center of the rice.
- Carefully roll the nori away from you, pressing gently but firmly to seal. Use a touch of water if needed to seal the edge.
- Using a sharp knife dipped in water, slice the roll into bite-sized pieces—aim for about six pieces per roll.

- For added flavor, consider including spicy mayo or other fresh vegetables.
- Leftover sushi bites can be stored in an airtight container in the fridge; reheat in a toaster oven to maintain crispness.
