Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • ¾ cup granulated sugar (divided)
  • 16 oz cream cheese (softened)
  • ½ cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs (room temperature)
  • Pinch of salt

Instructions

  1. Preheat the oven to 325°F (160°C). Mix graham cracker crumbs and melted butter in a bowl, then press into an 8×8 inch baking dish lined with parchment paper.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add ½ cup sugar, mixing until fluffy. Stir in sour cream and vanilla extract.
  3. Add eggs one at a time, mixing gently after each addition. Pour the filling over the crust and smooth the top.
  4. Bake for 30-35 minutes until slightly jiggly in the center. Allow cooling at room temperature before refrigerating for at least 4 hours.
  5. Before serving, sprinkle remaining granulated sugar on top and caramelize using a kitchen torch or broiler until golden brown.
