- ¾ cup granulated sugar (divided)

Instructions
- Preheat the oven to 325°F (160°C). Mix graham cracker crumbs and melted butter in a bowl, then press into an 8×8 inch baking dish lined with parchment paper.
- In another bowl, beat softened cream cheese until smooth. Gradually add ½ cup sugar, mixing until fluffy. Stir in sour cream and vanilla extract.
- Add eggs one at a time, mixing gently after each addition. Pour the filling over the crust and smooth the top.
- Bake for 30-35 minutes until slightly jiggly in the center. Allow cooling at room temperature before refrigerating for at least 4 hours.
- Before serving, sprinkle remaining granulated sugar on top and caramelize using a kitchen torch or broiler until golden brown.
