  • 810 flour tortillas
  • 8 oz cream cheese
  • ½ cup sour cream
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Sauté diced onion in olive oil until translucent. Add minced garlic, then cook chicken until fully cooked (about 6-7 minutes per side). Shred the chicken once cooled.
  2. In the same skillet, melt cream cheese with sour cream and chicken broth over low heat; stir until smooth. Mix in half of the shredded cheese.
  3. Fill tortillas with shredded chicken and roll tightly. Place seam-side down in a greased baking dish.
  4. Pour remaining sauce over enchiladas and sprinkle with leftover cheese.
  5. Cover with foil and bake for 20 minutes, then uncover and bake an additional 10 minutes until golden brown.
