Ingredients

  • 9 oz cheese tortellini
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 14.5 oz canned diced tomatoes
  • 1 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions in a large pot of salted boiling water until they float. Drain and set aside.
  2. In a pan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the canned diced tomatoes with their juices, followed by the heavy cream. Mix well and let it simmer for 5-7 minutes until slightly thickened.
  4. Season the sauce with salt and pepper to taste. Add the cooked tortellini to the sauce and gently fold to coat.
  5. Remove from heat and stir in chopped fresh basil just before serving.
