- 2 tbsp olive oil
- 3 cloves garlic, minced
- 14.5 oz canned diced tomatoes
- 1 cup heavy cream
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions in a large pot of salted boiling water until they float. Drain and set aside.
- In a pan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the canned diced tomatoes with their juices, followed by the heavy cream. Mix well and let it simmer for 5-7 minutes until slightly thickened.
- Season the sauce with salt and pepper to taste. Add the cooked tortellini to the sauce and gently fold to coat.
- Remove from heat and stir in chopped fresh basil just before serving.
