- 1 medium head of cauliflower
- 1 bulb of garlic
- 2 tablespoons unsalted butter
- 1/4 cup heavy cream (or milk)
- Salt and freshly cracked black pepper
Instructions
- Preheat your oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft.
- Chop cauliflower into even florets. Boil salted water in a large pot and cook cauliflower for 10-12 minutes until fork-tender.
- Drain the cauliflower and return it to the pot. Squeeze the roasted garlic cloves into the pot along with butter and heavy cream.
- Use an immersion blender or potato masher to blend until smooth and creamy. Adjust seasoning with salt and pepper to taste.
- Serve warm, garnished with fresh herbs if desired.
