Delight in this creamy roasted garlic mashed cauliflower, a healthy and satisfying alternative to traditional mashed potatoes that will elevate any meal.


Ingredients

Scale
  • 1 medium head of cauliflower
  • 1 bulb of garlic
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy cream (or milk)
  • Salt and freshly cracked black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft.
  2. Chop cauliflower into even florets. Boil salted water in a large pot and cook cauliflower for 10-12 minutes until fork-tender.
  3. Drain the cauliflower and return it to the pot. Squeeze the roasted garlic cloves into the pot along with butter and heavy cream.
  4. Use an immersion blender or potato masher to blend until smooth and creamy. Adjust seasoning with salt and pepper to taste.
  5. Serve warm, garnished with fresh herbs if desired.
