Colcannon Mashed Potatoes are a creamy, flavorful side dish that beautifully combines fluffy potatoes with tender cabbage and green onions, creating a comforting addition to any meal.

- 2 lbs Russet Potatoes, peeled and quartered
- 1 cup fresh Green Cabbage, finely chopped
- 1/2 cup Green Onions, sliced
- 4 tbsp unsalted Butter (plus more for serving)
- 1/2 cup Heavy Cream
- Salt and Pepper to taste
- Fresh Chives (optional, for garnish)
Instructions
- Peel and quarter the Russet potatoes. Rinse under cold water.
- In a large pot of salted water, boil the potatoes for 15-20 minutes until fork-tender.
- While the potatoes cook, melt butter in a skillet over medium heat and sauté cabbage and green onions until tender (about 5-7 minutes).
- Drain the cooked potatoes and return them to the hot pot. Mash until smooth.
- Stir in heavy cream and butter until creamy. Season with salt and pepper to taste.
- Gently fold in the sautéed cabbage and onions before serving hot.
Notes
- For added flavor, experiment with other greens such as kale or spinach.
- A sprinkle of garlic powder can enhance the taste further!
