Description

Colcannon Mashed Potatoes are a creamy, flavorful side dish that beautifully combines fluffy potatoes with tender cabbage and green onions, creating a comforting addition to any meal.


Ingredients

Scale
  • 2 lbs Russet Potatoes, peeled and quartered
  • 1 cup fresh Green Cabbage, finely chopped
  • 1/2 cup Green Onions, sliced
  • 4 tbsp unsalted Butter (plus more for serving)
  • 1/2 cup Heavy Cream
  • Salt and Pepper to taste
  • Fresh Chives (optional, for garnish)

Instructions

  1. Peel and quarter the Russet potatoes. Rinse under cold water.
  2. In a large pot of salted water, boil the potatoes for 15-20 minutes until fork-tender.
  3. While the potatoes cook, melt butter in a skillet over medium heat and sauté cabbage and green onions until tender (about 5-7 minutes).
  4. Drain the cooked potatoes and return them to the hot pot. Mash until smooth.
  5. Stir in heavy cream and butter until creamy. Season with salt and pepper to taste.
  6. Gently fold in the sautéed cabbage and onions before serving hot.

Notes

  •  For added flavor, experiment with other greens such as kale or spinach.
  • A sprinkle of garlic powder can enhance the taste further!
