Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz penne or fettuccine pasta
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Chop sun-dried tomatoes and mince garlic.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper. Cook until golden brown and cooked through (about 6-7 minutes per side). Remove from skillet.
  3. In the same skillet, add minced garlic and chopped sun-dried tomatoes; sauté until fragrant (about 2 minutes).
  4. Pour in heavy cream slowly while stirring constantly. Let simmer until slightly thickened (about 3 minutes).
  5. Cook pasta according to package instructions until al dente. Toss cooked pasta in the creamy sauce until well coated.
  6. Slice chicken and nestle on top of the pasta. Sprinkle with Parmesan cheese and garnish with fresh basil before serving.
