Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup elbow macaroni
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables
  • Salt and black pepper to taste
  • 1 tsp dried thyme or Italian seasoning

Instructions

  1. In a large pot over medium heat, add a splash of oil. Season the chicken breasts with salt and pepper and cook until browned on both sides (about 6-8 minutes). Remove from the pot and let rest.
  2. In the same pot, sauté the chopped onions and minced garlic until fragrant.
  3. Pour in the chicken broth and bring to a boil. Stir in the elbow macaroni; cook until al dente (about 7-9 minutes).
  4. Lower the heat and stir in the heavy cream followed by the cheddar cheese until melted.
  5. Dice the cooked chicken and add it back to the pot along with frozen mixed vegetables. Simmer for an additional 5 minutes.
  6. Taste and adjust seasoning as needed.
