- 1 cup elbow macaroni
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables
- Salt and black pepper to taste
- 1 tsp dried thyme or Italian seasoning
Instructions
- In a large pot over medium heat, add a splash of oil. Season the chicken breasts with salt and pepper and cook until browned on both sides (about 6-8 minutes). Remove from the pot and let rest.
- In the same pot, sauté the chopped onions and minced garlic until fragrant.
- Pour in the chicken broth and bring to a boil. Stir in the elbow macaroni; cook until al dente (about 7-9 minutes).
- Lower the heat and stir in the heavy cream followed by the cheddar cheese until melted.
- Dice the cooked chicken and add it back to the pot along with frozen mixed vegetables. Simmer for an additional 5 minutes.
- Taste and adjust seasoning as needed.
