  • 16 oz package gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add diced chicken seasoned with salt and pepper. Cook until golden brown, about 5-6 minutes.
  2. Stir in minced garlic and fresh spinach; sauté until fragrant and spinach wilts, about 1 minute.
  3. Pour in heavy cream and chicken broth; reduce heat slightly and simmer for 3-4 minutes until slightly thickened.
  4. Fold in cooked gnocchi and cook together for another 3-4 minutes to absorb flavors.
  5. Mix in grated Parmesan cheese and Italian seasoning; sprinkle with red pepper flakes if desired. Serve hot.
