Ingredients

  • 1 lb beef sirloin, sliced against the grain
  • 12 oz wide egg noodles
  • 1 cup sour cream
  • 8 oz fresh mushrooms, thickly sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp paprika
  • Salt & pepper, to taste

Instructions

  1. Prep Your Ingredients – Slice beef sirloin, dice onion and garlic, and slice mushrooms.
  2. Sauté Aromatics – Melt butter in a large skillet over medium heat. Add onions and mushrooms, cooking until soft (about 5 minutes).
  3. Brown the Beef – Add the sliced beef, seasoning with salt and pepper. Sear until browned on all sides.
  4. Build the Sauce – Stir in garlic, then sprinkle flour over the mixture. Cook for 1 minute while stirring to prevent lumps.
  5. Simmer & Thicken – Slowly pour in beef broth and add paprika, stirring constantly. Let it simmer until slightly thickened (about 5 minutes).
  6. Make it Creamy – Reduce heat and carefully stir in sour cream, ensuring it doesn’t boil.
  7. Cook the Noodles – Boil egg noodles according to package instructions until al dente. Drain, reserving some pasta water.
  8. Bring it Together – Toss noodles in the stroganoff sauce or layer them in bowls before serving.
