Description

Lasagna Soup is a warm, hearty dish that combines all the beloved flavors of traditional lasagna into a comforting bowl. Perfect for cozy nights with family!


Ingredients

  • 1 lb ground beef or turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 4 cups low-sodium chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Fresh basil (optional)

Instructions

  1. In a large pot, heat 2 tbsp olive oil over medium heat. Sauté the chopped onion until soft (about 5 minutes). Add minced garlic and cook until fragrant.
  2. Stir in ground beef or turkey. Cook until browned (7–10 minutes), breaking it apart as it cooks.
  3. Pour in crushed tomatoes and broth; mix well to create a flavorful base.
  4. Add broken lasagna noodles to the pot and stir gently to combine.
  5. Sprinkle Italian seasoning over the soup and let simmer on low for about 20 minutes, stirring occasionally, until noodles are tender but not mushy.
  6. Off the heat, stir in shredded mozzarella until melted and gooey. Serve hot and garnish with fresh basil if desired.

Notes

  • For a vegetarian version, substitute meat with mushrooms or lentils and use vegetable broth.
