- 1 lb ground beef or turkey
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 28 oz can crushed tomatoes
- 4 cups low-sodium chicken or vegetable broth
- 8 oz lasagna noodles, broken into pieces
- 2 cups shredded mozzarella cheese
- 2 tsp Italian seasoning
- Fresh basil (optional)
Instructions
- In a large pot, heat 2 tbsp olive oil over medium heat. Sauté the chopped onion until soft (about 5 minutes). Add minced garlic and cook until fragrant.
- Stir in ground beef or turkey. Cook until browned (7–10 minutes), breaking it apart as it cooks.
- Pour in crushed tomatoes and broth; mix well to create a flavorful base.
- Add broken lasagna noodles to the pot and stir gently to combine.
- Sprinkle Italian seasoning over the soup and let simmer on low for about 20 minutes, stirring occasionally, until noodles are tender but not mushy.
- Off the heat, stir in shredded mozzarella until melted and gooey. Serve hot and garnish with fresh basil if desired.
Notes
- For a vegetarian version, substitute meat with mushrooms or lentils and use vegetable broth.
- Feel free to add spinach for extra veggies or sprinkle red pepper flakes for a spicy kick.
