Ingredients

Scale
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 4 (8 oz) packages full-fat cream cheese (softened)
  • 1 cup sour cream
  • 4 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan to form the crust. Bake for 8 minutes.
  3. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla until well incorporated.
  4. Add eggs one at a time on low speed until just combined; do not overmix.
  5. Pour the filling over the baked crust and bake for 55-60 minutes until set but slightly jiggly in the center.
  6. Turn off the oven and leave the door ajar for an hour to cool gradually before chilling in the refrigerator for at least 4 hours.

Notes

  • Use room temperature ingredients for a smoother batter.
  • For added richness, consider using heavy cream instead of sour cream.
  • Experiment with various toppings such as fresh fruits or chocolate sauce to personalize your cheesecake.
