Description

Classic coleslaw with Greek yogurt dressing is a refreshing side dish that combines crisp cabbage and vibrant carrots, all coated in a creamy, tangy dressing for a healthy twist.

Ingredients

Scale
  • 4 cups green cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup plain Greek yogurt
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp celery seed
  • Salt and pepper to taste

Instructions

  1. Finely shred the green cabbage and grate the carrots.
  2. In a mixing bowl, combine Greek yogurt, apple cider vinegar, honey, celery seed, salt, and pepper until smooth.
  3. In a large bowl, mix the shredded cabbage and grated carrots. Pour the dressing over them and toss until evenly coated.
  4. Chill in the fridge for at least 30 minutes before serving to let flavors meld.
  5. Serve cold and enjoy!

Notes

  • For added sweetness, consider mixing in chopped apples or raisins.
  • Customize your coleslaw by adding jalapeños for a spicy kick or using whole grain mustard instead of regular mustard.
