Description

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh parsley leaves
  • 1/2 cup fresh cilantro leaves (optional)
  • 4 garlic cloves
  • 3 tbsp lemon juice (for tanginess)
  • 1/2 cup extra virgin olive oil
  • 1 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a blender, combine parsley, cilantro, garlic, lemon juice, olive oil, red pepper flakes, salt, and pepper. Blend until smooth.
  2. Place chicken breasts in a resealable bag or bowl; pour half of the marinade over them. Marinate for at least 30 minutes or up to overnight in the refrigerator.
  3. Preheat your grill or skillet over medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes per side until cooked through (internal temperature of 165°F).
  4. Brush reserved marinade on cooked chicken for extra flavor before serving.
  5. Let rest for 5 minutes before slicing and serving.
