- 200g fresh noodles (egg or rice)
- 3 tbsp chili oil
- 3 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 cup mixed vegetables (bell peppers and snap peas)
- ¼ cup fresh cilantro, chopped
- 1 tbsp toasted sesame seeds
Instructions
- Gather all ingredients and bring a large pot of salted water to boil.
- Cook the noodles according to package instructions until al dente. Drain and rinse under cold water.
- In a skillet over medium heat, add 1 tablespoon of chili oil and sauté minced garlic for about 1 minute until fragrant.
- Add mixed vegetables to the skillet and stir-fry for 3-4 minutes until slightly softened but still crunchy.
- Toss in the cooked noodles, soy sauce, and remaining chili oil; stir well for about 2 minutes until heated through.
- Remove from heat and top with cilantro and sesame seeds before serving.
Notes
- Customize by adding tofu or chicken for extra protein.
- If you prefer milder flavors, reduce the amount of chili oil used.
