- 3–4 boneless, skinless chicken breasts (600g)
- 1 cup plain whole milk yogurt
- 2 tbsp garlic and ginger paste
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp garam masala
- 1 cup tomato puree
- 1 cup coconut milk or heavy cream
- Fresh cilantro for garnish
Instructions
- In a bowl, mix yogurt, garlic and ginger paste, cumin, coriander, and garam masala. Coat chicken pieces with the marinade and let sit for at least 30 minutes.
- Heat oil in a large pan over medium heat. Add marinated chicken in batches, cooking until browned on all sides (about 5 minutes). Remove from pan.
- In the same pan, add more garlic and ginger paste and tomato puree. Simmer for about 10 minutes until thickened.
- Stir in coconut milk or heavy cream and simmer for an additional 5 minutes.
- Return chicken to the pan and cook until fully cooked through (about 10 minutes). Garnish with fresh cilantro before serving.
Notes
- For enhanced flavor, marinate the chicken overnight.
- Feel free to substitute chicken with paneer or chickpeas for a vegetarian version.
- Adjust spice levels by reducing chili powder for a milder dish.
