- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 cup sliced bell peppers (mixed colors)
- 1 medium onion, sliced
- 2 tsp olive oil
- 1 tsp ground cumin
- 1 tsp chili powder
- Sour cream for serving (optional)
Instructions
- In a skillet, heat olive oil over medium heat. Add diced chicken breasts seasoned with salt, pepper, cumin, and chili powder. Cook until fully cooked and golden brown (about 6-7 minutes).
- Add sliced bell peppers and onions to the skillet. Cook until softened and fragrant (about 5 minutes).
- On one half of each tortilla, sprinkle shredded cheese. Layer on the chicken and sautéed vegetables before folding them in half.
- In the same skillet, place folded quesadillas seam side down. Cook until golden brown on one side (about 3-4 minutes), then flip to brown the other side.
- Once both sides are crispy and golden brown, remove from heat. Cut into wedges and serve hot with sour cream if desired.
