  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 cup sliced bell peppers (mixed colors)
  • 1 medium onion, sliced
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Sour cream for serving (optional)

Instructions

  1. In a skillet, heat olive oil over medium heat. Add diced chicken breasts seasoned with salt, pepper, cumin, and chili powder. Cook until fully cooked and golden brown (about 6-7 minutes).
  2. Add sliced bell peppers and onions to the skillet. Cook until softened and fragrant (about 5 minutes).
  3. On one half of each tortilla, sprinkle shredded cheese. Layer on the chicken and sautéed vegetables before folding them in half.
  4. In the same skillet, place folded quesadillas seam side down. Cook until golden brown on one side (about 3-4 minutes), then flip to brown the other side.
  5. Once both sides are crispy and golden brown, remove from heat. Cut into wedges and serve hot with sour cream if desired.
