Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 cup sliced bell peppers (mixed colors)
  • 1 medium sweet onion, thinly sliced
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Cook seasoned chicken breasts until golden brown, about 6-7 minutes per side. Remove and let cool.
  2. Sauté onions and bell peppers in the same skillet until softened, about 5 minutes.
  3. Shred the cooked chicken using two forks.
  4. On half of each tortilla, layer shredded chicken, sautéed veggies, and cheese. Fold over like a taco.
  5. Return quesadillas to the skillet and cook until golden brown and crispy, about 3-4 minutes on each side.
