- 4 large flour tortillas

- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Cook seasoned chicken breasts until golden brown, about 6-7 minutes per side. Remove and let cool.
- Sauté onions and bell peppers in the same skillet until softened, about 5 minutes.
- Shred the cooked chicken using two forks.
- On half of each tortilla, layer shredded chicken, sautéed veggies, and cheese. Fold over like a taco.
- Return quesadillas to the skillet and cook until golden brown and crispy, about 3-4 minutes on each side.
