Ingredients

  • 1 cup seasoned breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 8 oz fresh mozzarella cheese, sliced
  • 1 cup marinara sauce (store-bought or homemade)
  • Fresh basil leaves (for garnish)
  • 4 crusty sandwich rolls or hoagie buns
  • 2 tsp olive oil (for frying)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pound the chicken breasts between plastic wrap until about half an inch thick.
  3. Set up a breading station: one dish for flour, another for beaten eggs, and a third for breadcrumbs mixed with Parmesan.
  4. Dredge each chicken breast in flour, dip in egg wash, and coat with breadcrumbs.
  5. Heat olive oil in a skillet over medium-high heat; fry each breaded chicken breast for about 4-5 minutes per side until golden brown.
