Ingredients

  • 3 boneless skinless chicken breasts (about 1.5 lbs), diced
  • 4 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tablespoons curry powder
  • 4 cups low-sodium chicken broth
  • ¼ cup fresh cilantro, chopped (for garnish)
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat and add oil. Sauté the onions for about 5 minutes until translucent.
  2. Stir in minced garlic and curry powder; cook for an additional minute until fragrant.
  3. Add diced chicken to the pot and cook for 5-7 minutes, browning on all sides.
  4. Pour in chicken broth and coconut milk; bring to a simmer while stirring occasionally for 15 minutes.
  5. Add sliced carrots and continue to simmer for another 10 minutes until tender.
  6. Finish with lime juice, salt, and pepper to taste. Serve hot, garnished with fresh cilantro.
