- 4 cloves fresh garlic, minced
- 1 medium onion, chopped
- 2 medium carrots, sliced
- 1 can (13.5 oz) full-fat coconut milk
- 2 tablespoons curry powder
- 4 cups low-sodium chicken broth
- ¼ cup fresh cilantro, chopped (for garnish)
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat and add oil. Sauté the onions for about 5 minutes until translucent.
- Stir in minced garlic and curry powder; cook for an additional minute until fragrant.
- Add diced chicken to the pot and cook for 5-7 minutes, browning on all sides.
- Pour in chicken broth and coconut milk; bring to a simmer while stirring occasionally for 15 minutes.
- Add sliced carrots and continue to simmer for another 10 minutes until tender.
- Finish with lime juice, salt, and pepper to taste. Serve hot, garnished with fresh cilantro.
