- 2 cups aged basmati rice
- 1 cup plain yogurt
- 2 tbsp fresh ginger, minced
- 2 tbsp fresh garlic, minced
- 2 large onions, thinly sliced

- 4 whole cloves
- 4 green cardamom pods
- 0.5 cup cilantro leaves, chopped
- 0.5 cup mint leaves, chopped
- A pinch of saffron (optional)
- Salt to taste
- Vegetable oil for frying
Instructions
- 1. Marinate the chicken: In a bowl, mix yogurt, minced ginger, garlic, turmeric, garam masala, and salt. Add chicken thighs and marinate for at least 30 minutes.
- 2. Prepare the rice: Rinse basmati rice under cold water until the water runs clear. Cook in boiling salted water for about 7 minutes until it’s 70% done. Drain and set aside.
- 3. Cook onions: Heat oil in a large pot over medium heat. Sauté sliced onions until golden brown and caramelized.
- 4. Sauté chicken: Add marinated chicken to the pot with onions. Cook until chicken is no longer pink.
- 5. Layer ingredients: Layer partially cooked rice over the chicken mixture. Sprinkle cilantro and mint on top; drizzle saffron soaking liquid if using.
- 6. Final cooking phase: Cover tightly and reduce heat to low; steam for about 20 minutes to meld flavors.
- 7. Serve: Dish out hot servings with cucumber raita or salad on the side.
