  • 2 cups aged basmati rice
  • 1 cup plain yogurt
  • 2 tbsp fresh ginger, minced
  • 2 tbsp fresh garlic, minced
  • 2 large onions, thinly sliced
  • 1 tsp cumin seeds
  • 4 whole cloves
  • 4 green cardamom pods
  • 0.5 cup cilantro leaves, chopped
  • 0.5 cup mint leaves, chopped
  • A pinch of saffron (optional)
  • Salt to taste
  • Vegetable oil for frying

Instructions

  1. 1. Marinate the chicken: In a bowl, mix yogurt, minced ginger, garlic, turmeric, garam masala, and salt. Add chicken thighs and marinate for at least 30 minutes.
  2. 2. Prepare the rice: Rinse basmati rice under cold water until the water runs clear. Cook in boiling salted water for about 7 minutes until it’s 70% done. Drain and set aside.
  3. 3. Cook onions: Heat oil in a large pot over medium heat. Sauté sliced onions until golden brown and caramelized.
  4. 4. Sauté chicken: Add marinated chicken to the pot with onions. Cook until chicken is no longer pink.
  5. 5. Layer ingredients: Layer partially cooked rice over the chicken mixture. Sprinkle cilantro and mint on top; drizzle saffron soaking liquid if using.
  6. 6. Final cooking phase: Cover tightly and reduce heat to low; steam for about 20 minutes to meld flavors.
