- 1 package (6 oz) stuffing mix
- 1 cup low-sodium chicken broth
- 1 cup frozen mixed vegetables (peas and carrots)
- 1/2 cup sour cream or Greek yogurt
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 tbsp melted butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- Dice the chicken into bite-sized pieces and season with salt and pepper.
- In a large bowl, combine the chicken, stuffing mix, frozen vegetables, sour cream, garlic powder, onion powder, and half of the broth. Mix until well coated.
- Drizzle melted butter over the mixture and pour in the remaining broth. Gently combine.
- Transfer to the greased baking dish and bake uncovered for 45-50 minutes until bubbly and golden brown on top.
- Let it rest for about 10 minutes before serving.
