  • Salt & pepper to taste

Instructions

  1. Prepare all ingredients by chopping the vegetables finely for even cooking.
  2. In a large pot over medium heat, sauté the diced onion in a drizzle of oil until translucent (about 5 minutes).
  3. Add chopped carrots, celery, and boneless chicken thighs; stir until everything is coated in the onion juices.
  4. Pour in the chicken broth until all ingredients are covered; bring to a gentle boil then reduce heat to simmer.
  5. For dumplings, mix the dumpling mix with water according to package instructions or combine flour, baking powder, milk, and melted butter if making from scratch.
