Description

Chicken Alfredo is a creamy, comforting dish that transforms any dinner into a delightful experience. Quick to prepare and packed with flavor, it’s perfect for family meals or special occasions.

Ingredients

Scale
  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook the fettuccine pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook for about 6-7 minutes per side until golden brown and cooked through.
  3. Remove chicken from the skillet and let it rest for a few minutes before slicing into strips.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Be cautious not to burn it.
  5. Pour in the heavy cream while stirring continuously. Gradually add Parmesan cheese until melted and smooth.
  6. Combine sliced chicken and cooked fettuccine with the sauce in the skillet over low heat, ensuring all pasta is well coated.
  7. Serve topped with additional Parmesan cheese and freshly chopped parsley if desired.

Notes

  • For added nutrition, consider including steamed broccoli or spinach.
  • You can substitute fettuccine with penne or zoodles for a lighter option.
  • To retain creaminess when reheating leftovers, add a splash of milk.
