Ingredients
Scale
- 8 oz short pasta (penne or rotini)
- 1 lb lean ground beef or turkey
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 cup shredded cheddar cheese
- 14.5 oz can diced tomatoes

- ½ cup sour cream or Greek yogurt
- Fresh cilantro (optional, for garnish)
Instructions
- Prepare your ingredients by chopping the onion and mincing the garlic.
- In a large skillet over medium heat, brown the ground beef until fully cooked, about 7-10 minutes. Drain excess fat if needed.
- Add the diced onion and minced garlic to the skillet. Sauté until fragrant and translucent, about 3-4 minutes.
- Stir in uncooked pasta, diced tomatoes, and beef broth. Bring to a gentle boil, then reduce heat to low.
- Sprinkle in taco seasoning and stir until well combined.
- Cook until pasta is tender, approximately 12-15 minutes. Remove from heat and stir in shredded cheddar until melted.
- Fold in sour cream or Greek yogurt before serving hot; garnish with fresh cilantro if desired.
Notes
- For a lighter option, substitute ground turkey for beef.
- Add black beans for extra protein and fiber.
- Use gluten-free pasta to make this dish suitable for gluten-sensitive diets.
