- 1 cup long-grain white rice
- 1.5 cups shredded cheese (cheddar and mozzarella blend)
- 2 cups low-sodium chicken broth
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1 cup mixed vegetables (peas or bell peppers) – optional
- Salt and pepper to taste
Instructions
- Gather all ingredients and chop the onion and garlic.
- In a large skillet over medium heat, add olive oil. Sauté onions until translucent (3-4 minutes), then stir in minced garlic.
- Season chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown, about 5 minutes per side.
- Stir in uncooked rice and pour in chicken broth. Mix well.
- Cover the skillet with a lid, reduce heat to low, and simmer for about 20 minutes until rice absorbs the broth.
- Sprinkle cheese on top before serving hot.
