Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 can (15 oz) black beans, rinsed
  • 1 cup diced tomatoes, drained
  • 1 medium onion, finely chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • 4 servings frozen or homemade fries

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
  2. Add chopped onion and sauté until translucent. Stir in black beans, diced tomatoes, cumin, and chili powder.
  3. Mix in shredded cheese until melted and combined.
  4. Lay out each tortilla and spoon filling down the center. Roll tightly and tuck in the sides.
  5. Preheat oven to 425°F (220°C) and bake fries according to package instructions until golden brown.
  6. Heat oil in a skillet over medium heat; place burritos seam-side down and cook until browned on all sides.
