  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 2/3 cup milk
  • 4 cups fresh strawberries (sliced)
  • 1/4 cup granulated sugar (for strawberries)
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in softened butter until the mixture resembles coarse crumbs.
  4. Gradually add milk, stirring until just combined.
  5. Drop spoonfuls of batter onto the prepared baking sheet, spacing them two inches apart.
  6. Bake for 15-20 minutes until golden brown. Let cool slightly.
  7. While cooling, sprinkle sliced strawberries with sugar to macerate.
  8. Whip heavy cream with vanilla extract until soft peaks form.
  9. Slice shortcakes in half horizontally and layer with strawberries and whipped cream. Serve immediately.
